An easy caramel corn recipe that anyone can make!

Hubby has always been a huge fan of caramel corn.  He said the he loved to buy it from the mall because that he hadn’t found a caramel corn recipe that tastes anywhere near as good.   During our weekly visits to the mall when we lived out west and were kid free, he’d pick up a box to snack on.  When we moved east he was disappointed to learn that the caramel corn place in Towne East had gone out of business.    We felt that it was a waste to drive across town just to buy caramel corn so he simply went without.   One day he was out with a buddy and I decided I was going to make some to surprise him.   Here is where I admit that my first 5 attempts were a disaster.  He loved it so much that he hasn’t bought caramel corn from the mall in years!    He said he actually prefers the taste of my caramel corn recipe to that of store bought!   :)  Since it is so easy to make and delicious, I won’t complain when he asks me to make a batch or two.

 

Caramel Corn {Recipe}
 
Recipe type: snack

 
Caramel Corn that is easy to make and tastes like what you buy at the mall.
Ingredients
  • 8 Cups popped pop corn – Remove all unpopped kernels
  • ¾ Cup Brown Sugar (packed) – light or dark
  • 3 Tablespoons Corn Syrup -light or dark
  • 6 Tablespoons Butter
  • ¼ Teaspoon Baking Soda
  • ½ Teaspoon Vanilla
Instructions
  1. Preheat your oven to 300.
  2. Spray a large roasting pan with non-stick cooking spray and place popcorn inside.
  3. In a medium sauce pan combine the brown sugar, corn syrup and butter. Cook the mixture over medium heat while stirring constantly. Once the mixture starts to boil, stop stirring and let boil for 5 minutes without stirring.
  4. Remove from heat and stir in the vanilla and baking soda.
  5. Pour the mixture over the popcorn.
  6. Stir until the popcorn is well coated.
  7. Bake in a 300 degree oven for 15 minutes.
  8. Stir and place back in oven for 5 minutes.
  9. Remove from oven and stir. You’ll need to stir for the next 5 minutes while the popcorn cools so that it doesn’t stick together. When the caramel on the popcorn starts to harden you can stop stirring and let it sit to cool.
  10. Store in an air tight container.

    • We use to do the same thing!! We would drive an hour to get the mall Carmel corn!!!! So sad it is gone!!!! My brother loved the cinomon:)
