The craziness of the school year is just around the corner. Not only do the boys go back to school in just over a week, I start the following Monday. As if that wasn’t enough, Zack works for a college! Zack’s schedule is already crazy and won’t slow down until closer to September. Between all of the homework, meetings and practices and everything else thrown our way, nights can be interesting. I am the type of mom that love to plan everything and make lists. It doesn’t matter what time of the year it is! I make breakfast, lunch and dinner menus, shopping I’ve found that it’s been really helpful during the first few weeks of back to school craziness, when easy meals are a must. The boys love that they always know what their meal choices are and the plans for any given day. More importantly they know what days they need to grab a more than a light snack because dinner is going to be late.
I’ll let you in on a little secret. When I’m making the dinner menu for two weeks at a time, I always plan for one night of not wanting to cook and few easy meals. Those days we will have delivered pizza, hot dogs or a frozen meal. Since my back has been acting up we’ve had more nights that I don’t want to or simply can’t stand to cook, so our menu has been simpler. Luckily, hubby and the boys haven’t protested too much because they been able to find some new favorites. Stouffer’s Lasagna is one of them! On a recent trip to Walmart we were looking for quick and easy meals. Hubby and the boys talked me into trying Stouffer’s Baked Ziti for an easy to make meal. I figured by adding an easily customizable side salad and garlic bread everyone would be happy.
We then moved on to my favorite part of every meal, DESSERT! The boys immediately gravitated towards S’mores flavored Edy’s Slow Churned Ice Cream. Since I’m lactose intolerant, ice cream isn’t a dessert option for me. Zack doesn’t like to eat ice cream in front of me so we went looking for something that we could enjoy together. After some debating we agreed on the yummy looking Nestle Cookie Brownie. Even though I have to watch what I eat from time to time or whenever ice cream is involved, I like to make sure the boys get to enjoy what they want! I’ve found it’s pretty easy to make little changes to meals or desserts so that I can enjoy them with the family. I don’t want the whole family to go without the foods they love just because my stomach can’t handle it!
